Where is the innovation in the market for food?

If somebody could eat an entire serving of fake chicken nuggets with honey mustard, with no fat, due to the fact that it contains no animal products, wouldn't people be much happier? People have all of these low fat things, like they are desperately holding onto animal products. The truth is that there are perfectly good substitutes for just about all condiments and many good substitutes for meats. So, where is the innovation to make those substitutes cheap and convineant so that people can start eating them??? Eh???
